Gnocchi Gnight

GNOCCHI! This is one of my fave recipes, mostly because I love anything potatoes. Oh yea, did I mention Gnocchi are basically potato dumplings? Yum right? I could make them out of scratch but the ones at Trader Joe’s save a lot of time and in my opinion, are just as good! Gnocchi is typically made with a sauce and cheese sort of like a pasta. My boyfriend and I have made these many ways before, usually vegetarian, but this time we decided to be a little adventurous and add some bacon to it.
Ingredients:
Gnocchi
2 ripe avocados
2 cups of spinach (If you’re not a fan of spinach you can substitute any green vegetable like brussel sprouts or kale).
1/2 cup of sun dried tomatoes
6-8 oz of a log of goat cheese
3 limes
4-6 strips of bacon
Salt
Pepper
So you’ll want to start with your sauce first. Cut up your avocados, cheese and limes and put them all into the blender, season it with some salt and pepper.
Blend it up and Viola!
Put your sauce aside and start dicing up your sun dried tomatoes and bacon.
Put your bacon into a pan to get it nice and crispy. Start on medium high heat.
Add in your sun dried tomatoes
and spinach.
Let the spinach cook down.
Now, begin to stir in the sauce.
Boil a pot of salted water then add your gnocchi.
You’ll know they’re done when they rise to the top. I shouldn’t take more than 5 minutes.
If you want a thinner sauce, you can add a bit of gnocchi water.
Toss together
Serve
Garnish
and enjoy with your choice of drink!
