PSA: Can’t Do Tuesday Without Tacos

It’s the second best day of the week (Friday is first duh) which ends to usually be my cheat day, Taco Tuesday!!! Lupo and I make these way to often to not share with you. It is so much cheaper/healthier than going out to eat. Usually our guilty pleasure is Taco Bell but we like to make our own when we are trying to cut our calorie consumption in half.

Ingredients:
Crunchy taco shells
Your choice of cheese –Here we have used a Mexican blend.
Shredded lettuce
Diced tomatoes
Lean ground beef –We like to change it up and sometimes use ground Turkey. Lupo’s more of a red meat guys so we have to compromise.
Seasoning — We just different spices and made our personal seasoning.
Limes
Onions
and pretty much anything else you like in your tacos like sour cream, guacamole, cilantro, etc.

 

 

 

 

Okay, so you’re probably wondering why in the world am I putting Onions and lemon in my crunchy tacos. That doesn’t sound right. Well if you’re a fan of spicy, sour onions like I am then you’re in for a treat. These marinated onions are so easy to make and you can put them on literally everything.
So first, you want to cut your onion into slices like the ones shown in the picture and put them into a bowl. Then you basically want to drench them and cover them up in freshly squeezed lime juice. Once you’v done that you add oregano, chili flakes and a pinch of salt. Then you mix it all up and depending on how you like your onions you let them sit for about an 20 minutes-1 hour So you may want to prepare these first. Personally, I think the longer I leave them, the softer and the juicier they get.

 

 

So while you wait for your onions to marinate you can cook your desired taco meat. Put the heat to medium/high. You can add some olive oil if your meat is lean (ours was 85/15 so we used a little so it didn’t stick) Once the pan heats up, toss in the meat, stir and once it loses it’s pink/reddish color, mix in the seasoning.

Once you’ve cooked your meat, you’re ready to eat. Tacos aren’t complete with out a yummy Mexican side dish so feel free to make some beans or rice to treat yourself.

 

 

Then garnish your Tacos with whatever you’d like and enjoy!
