Scallops in Asparagus Sauce: V-Day Recipe

Not sure what to cook your man/girl next Tuesday for Valentine’s day? Or perhaps you’re hosting a galentines day dinner at your place? Well I’ve got just the recipe! If you don’t know by now, I’m a seafood FIEND. I’m no sure why I’m not pescatarian yet since that is pretty much all I eat. So when coming up with a Valentine’s day dinner, I decided to stray from the typical steak. Tonight, we’re making scallops in asparagus sauce because what’s not sexy about scallops?

    

Ingredients: 
Scallops
Chicken Broth
Asparagus
Salt & Pepper
Chili Flakes

Recipe:

Peel asparagus and cut into 3-4 inch pieces.
Throw into salted boiling water for 8-10 minutes.
In a separate pot have chicken broth simmering.
Add asparagus and chicken broth into blender and blend until it reaches silky consistency.
Pour into pot on low heat, add 1 tbs of butter and season with salt and pepper.
Prepare the scallops by seasoning both sides with salt and pepper.
In a pan over high heat use 2 tbs of oil (i used grape seed oil) place scallops and sear on both sides for about 2-3 minutes.
Plate with asparagus sauce first, then add your scallions on top then sprinkle chili flakes if desired.
Pair it with your favorite white wine, add a salad, some rice or add it as your appetizer to you steak.
