Holiday Side Dishes: Broccoli Salad with Bacon Dressing

Does anyone else’s significant other try to micromanage their cooking? haha. That’s literally Lupo. Although, we have a hard time getting along in the kitchen, we wanted to share with you easy holiday side dishes that you can make with you s/o or family and friends that were very easy and fun to do. Show up with them to any holiday party or gathering and I promise they’ll be a hit. 

First, we went with a salad that is technically healthy because it’s mostly made up of brocolli. But what makes it delicious is the bacon dressing an cheddar cubes. My mouth is literally watering as I type this. Yea, It’s that good!

Ingredients:
12-16 oz Fresh Broccoli
1/2 pack(6oz)  of Bacon
2 Tbls Bacon Fat
4 Tbls Mayonnaise
1/4 Red Onion
5 oz Cheddar Cheese
1/4 cup Sun Flower Seeds
1/4 cup Dried Cranberries
2 Tbls Apple Cider Vinegar
1 Tsp Honey


STEPS

  • Start by cutting the broccoli into small florets (bite size), place in big mixing bowl
  • Cook your bacon, for this recipe the crispier the better! Set aside on a plate when done and save your bacon fat for a later step.
  • Chop bacon into small pieces.
  • In a separate pan toast your sunflower seeds.
  • Chop your cheese into little cubes, if you like shredded that works also!
  • Cut your red onion into thin slices.
  • Now make the dressing by combining the mayonnaise, bacon fat, apple cider vinegar, and honey. Season with salt and pepper.
  • Add the dressing to the broccoli and toss.
  • To the dressed broccoli add the remaining ingredients; chopped bacon, red onion, cheese, dried cranberries, and top with toasted sunflower seeds! Yum!
